My go-to chili recipe using lean ground turkey, kidney beans, veggies and a blend of spices. Seriously one of the easiest and yummiest recipes I know!
Put oil in a large pot and place over medium high heat. Add in onion, minced garlic and red pepper, and saute for 5-7 minutes.
Move the veggies to one side of the pot and add in the ground turkey on the other side. Cook the turkey until no longer pink.
Next, add in the chili powder, cumin, cayenne pepper and salt, stir to mix.
Next, add in the full can of tomatoes with juice, the chicken broth, drained kidney beans and drained corn.
Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens.
Garnish with cheese, cilantro, avocado, tortilla chips, and anything else you want!
