Healthy Turkey Chili

My go-to chili recipe using lean ground turkey, kidney beans, veggies and a blend of spices. Seriously one of the easiest and yummiest recipes I know!

Ingredients

  • 2 tsp olive oil
  • 3 cloves garlic minced
  • 1 yellow onion
  • 1 medium red bell pepper
  • 1 lb extra lean ground turkey
  • 1 28 oz can diced tomatoes
  • 1 1/4 cups chicken broth
  • 2 15 oz cans dark red kidney beans rinsed and drained
  • 1 15 oz can sweet corn rinsed and drained
  • 4 tbsp chili powder
  • 1 tsp dried oregano
  • 2 tsp ground cumin
  • 1/4 tsp cayenne powder
  • 1/2 tsp salt
  • avocado
  • tortilla chips
  • cilantro
  • cheese

Instructions

  1. Put oil in a large pot and place over medium high heat. Add in onion, minced garlic and red pepper, and saute for 5-7 minutes.

  2. Move the veggies to one side of the pot and add in the ground turkey on the other side. Cook the turkey until no longer pink.

  3. Next, add in the chili powder, cumin, cayenne pepper and salt, stir to mix.

  4. Next, add in the full can of tomatoes with juice, the chicken broth, drained kidney beans and drained corn. 

  5. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens.

  6. Garnish with cheese, cilantro, avocado, tortilla chips, and anything else you want!
