Hey there, lovelies!

Valentine’s Day is less than a week away! I can’t even believe it! Time seriously flies …

When I was away in London, my sweet friend, Shay Shull, sent me one of her cookbooks! It was such a sweet surprise to come home to and it’s been especially great now that I’ve been trying to be better about not eating out as much! It is FULL of really yummy breakfast, lunch, dinner & dessert recipes that are super simple to make. I am NO chef, by any means, and every one of the ones I’ve made have come out beautifully! There are a lot of crock-pot recipes, as well, which have quickly become my favorite thing ever because you just throw a few ingredients in and just let it cook over 3-4 hours or 6-7 hours depending on what heat setting you have the crock-pot on.

One of the things I love about the cookbook is that it’s broken up by month so in the colder weather months, there are a lot of chili’s and stews that are nice for those cold nights. I made the Chicken & Dumplings recipe a couple weeks ago and it was SO GOOD! For the month of February, there are a few really cute festive Valentine’s Day dessert options. I decided to whip up the Red Velvet M&M Brownies the other day and couldn’t believe how simple and PERFECT this recipe would be for anyone who is celebrating Valentine’s Day with their girlfriends! So, if you have any Galentine’s Day plans … consider making them! Kaylee (one of my photographers, who I’ve known since high school and is a good friend of mine!) and I decided to pair ours with glasses of rosé, which is never a bad idea, in my opinion! 🙂

The recipe is below for anyone who may be wanting to make them for your office, your friends, your mom, or anyone you want to spoil for Valentine’s Day that loves brownies or has a sweet tooth!

 

Red Velvet M&M Brownies

A simple and delicious recipe to whip up to serve to the loves of your life this Valentine's Day!

Ingredients

  • 1 box red velvet cake mix
  • 2 eggs
  • 1/3 cups vegetable oil
  • 1 cup M&M's [I used Valentine's Day ones]

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish. Set aside.

  2. Combine the first 3 ingredients in a mixing bowl with a spoon. [NOTE: Batter will be thick!] Stir in M&M's.

  3. Spread batter across the bottom of prepared pan and bake about 14 minutes or until a toothpick inserted in the middle comes out clean.

  4. After you pull the warm brownies out of the oven, sprinkle a few extra M&M's on top. Cut into square and serve!

Super simple, right??
