Chocolate Chip Pumpkin Bar Recipe with eBay

The start of the Fall season, in my mind, also marks the start of baking season! This is the time of year where coming together around meals is celebrated and prioritized more than any other time of year. Whether it be for tailgates, weddings or any one of the holidays we are about to start prepping for, I always feel like I am flipping through my cookbooks trying to find the perfect thing to whip up as a contribution. Today, I’m excited to be partnering with eBay to share what I use to make putting together those last minute dishes together a complete breeze!

I recently picked up the KitchenAid Classic 4.5 Qt Stand Mixer from eBay and have already used it to make waffle batter last weekend and one of my favorite Fall desserts this past week. I shared these little delights on Instagram Stories on Monday and was flooded with requests for the recipe! It actually belongs to my dear friend, Shay Shull, who runs the blog Mix and Match Mama, and she was agreeable to letting me share it here for you guys.

First, and foremost, the recipe is called Chocolate Chip Pumpkin Bars. Here’s what you’ll need:

Ingredients

1 box of chocolate cake mix

4 eggs

1 stick melted butter

4 cups powdered sugar

1 (8 oz) package of cream cheese, softened

1 cup canned pumpkin [I use organic pumpkin by Libby’s]

1 tablespoon pumpkin pie spicy [you can also use cinnamon]

1 cup chocolate chips

Directions

STEP  1 | Preheat oven to 350 degrees. Grease a 9 x 13 baking dish. I use Coconut Oil Spray from Trader Joe’s.

STEP 2 | In a bowl, combine cake mix, 2 eggs and melted butter. Spread the batter along the bottom of the pan.

STEP 3 | In a second bowl, use your KitchenAid Mixer to mix together your powdered sugar, 2 more eggs, cream cheese, pumpkin and tablespoon of pumpkin pie spice. Stir in chocolate chips. Spread on top of crust mixture.

STEP 4 | Bake 35-40 minutes until the edges are brown and the center is set. It will still be slightly wobbly in the middle.

STEP 5 | Cool on the counter for 30 minutes then refrigerate for 2 hours or up to 2 days.

STEP 6 | ENJOY!

There’s just something about my trusty KitchenAid Mixer, y’all! This thing makes putting those get together contributions together a breeze! There are 10 speed options and it comes with multiple attachments for your mixing needs!

Do you have one? If you’ve been holding out, I’d definitely recommend taking a look at eBay. It’s super easy to search for the size and color that you’re looking for using the filters on the left hand side of the screen after you submitted your initial search. I wanted a ‘silver’ one that was ‘New’ so I selected those filter option and it only showed me results that complied with that criteria. Everything that I’ve sought out to purchase on eBay has always come to me in great condition. Did you know that 81% of everything sold on eBay is new and available to purchase with the ‘Buy It Now’ option? I’ve used it quite a few times and it never disappoints, plus the item more often than not ships for free!

    I might be an idiot, but I can’t see where you put in the “1 cup chocolate chips” in your steps above. I went to MixandMatchMama’s site and found it. You stir them in after the cream cheese and pumpkin is mixed and before you pour on the cake mix. Not trying to be critical – just posting in case this helps someone else that decides to make these soon!

    Another great use for a kitchen-aid mixer is shredding chicken. I bake it in the oven, let it cool for 5 min, and then throw it in the mixer with the paddle attachment and 30 seconds or so later you have shredded chicken! I haven’t had to do it by hand in years. 🙂
